The Bourbon Vanilla from Madagascar is  most appreciated for its delicate aroma and persistent high levels of  Vanillin, synonym of quality all over the world and is the favourite choice of most chefs.

The long pods of Vanilla Bourbon are of exceptional quality and their goodness is due to a long and delicate process. A traditional process where the pods are removed from the plant when they are green , and subsequently dried by the sun under a woollen cover.

Only with this method  will they obtain the dark colour and unmistakeable aroma that everyone knows.
Particular attention must be paid to the exsiccation  , the pod must remain soft without  becoming too moist, in order to guarantee both the aroma and the preservation . Furthermore  the best Vanilla pods must reach  at least 16 cm. In length.
