Mec3 invests in innovation
through its  Sensory Analysis laboratory


Mec3 is an enterprise with a exceptional vocation for innovation that has gained a series of successes and recognitions over the years.
The Mec3 Sensory Analysis Laboratory is one of the hinges of this philosophy turned towards innovation and towards continued amelioration.

Just there science merges with the antique tradition of Italian artisan gelato.

The laboratory is pursuant to the ISO 8589 international rules and consists of an area equipped with individual valuation boxes booths and an area arranged to prepare the samples.

This structure with its tasting stations, spaces that conform to the international standards consents that the sensory test are carried out under controlled and safety conditions, without distractions.

What is Sensory Analysis?

It is a scientific discipline which allows to transform a qualitative and subjective opinion (good, bad) in a quantitative and objective measurement of the features of one food, in our case, products for Gelato.

First of all, in order to perform the sensory analysis, Mec3 provides training of the judges group under international standards. The training purpose is to make the judges valuation objective and so that they can provide comparable data.

Therefore, when the judges taste a Gelato recipe, for example, they will not valuate it as good or bad, but they will be able to quantify features like colour homogeneity, smell, crispness, acidity, sweetness, astringent- ness, meatiness, hardness, piquancy, …

The Sensory test is conduced by the Panel Leader, who is the Mec3 manager responsible for the judges training  and for the development of Sensory tests.

Why a Sensory Analysis test is conduced?

Mec3 effectuate Sensory Analysis Tests in order to evaluate a product to:
  • test a new raw material
  • Test a new recipe or product
  • Test an already existent recipe, but optimized by substituting an ingredient with the purpose of perfecting that recipe
  • Find the optimal condition for packing, preserving, transporting and serving one product
Mixing science, statistic and psychology, the purpose of each test is the improvement towards the consumer.

In fact, together with R&D department the Marketing department and the Sensory Analysis Laboratory complete the pillars which support Customer Science, the science which puts the consumer in the center with his need and desires.
